Sour cherry in general

Sour cherry is a favourite fruit in Europe, grown almost in every European country. The most significant orchards are in Poland, Serbia, Hungary and Germany. For industrial processing the most suitable varieties are Schattenmorellen and the Hungarian “Pandy”. They are very nice in appearance, size and taste.

Serbian Oblachinska is the most popular sour cherry used in the freezing industry as well as canning. Although in size it is smaller than the Hungarian Pandy,  but  its darker colour, and the intensive strong acidic taste makes it  popular in the confectionery and baking industry. The Polish Lutovka variety is mainly used for juice production and freezing industry.

The technology

Anyone wishing to produce quality canned fruit needs to start by inspecting the sour cherry in the orchard. It is important to monitor the farmers’ compliance with the appropriate agrochemical technologies, the proper protection against viral, fungal infections and fruit pests.

–  We buy fruits only from validated farmers, who were monitored during the whole growing season
–  Incoming fruits are inspected  according to our following criteria
– Washers, optical sorter, built-in magnets, precision pitting machines ensure high quality
– During processing, we control the production at several points and intervene in the technological process if necessary.

The product is preserved by heat treatment, below 100°C, so called pasteurization. No preservative  is added.
